From the unpolluted waters of the northern South Island of New Zealand. As in ancient times, this salt is extracted from the sea by evaporation, harnessing the natural processes of the sun and wind. Unrefined, it is richer in minerals such as calcium, magnesium and other trace elements than iodised table salt. It has no anti-caking agents or bleaches. To be used sparingly as the extra minerals already enhance the taste.
